Ingredients:
- 2 tomatoes (1 cup diced)
- 1/2 cucumber (1 cup diced)
- 1 red bell pepper (1 cup diced)

Dressing Ingredients
- 2 tbsp. olive oil
- 1/4 c. fresh parsley
- 1 tsp. lemon juice

Directions:
