  • 1/2 c. sweet onion (chopped)
  • 1 green bell pepper (chopped)
  • 1 red bell pepper (chopped)
  • 2 celery stalks (chopped)
  • 1 15oz can black-eyed peas (drained and rinsed)
  • 1 15oz can black beans (drained and rinsed)
  • 1 14ox can Rotel tomatoes (or any other brand of tomatoes with green chiles) – mild or hot, drained
  • 1 c. corn kernels (drained)
  • 1 1/4 c. zesty italian dressing (check the label for your dietary and allergy needs

  • Corn chips


  1. Place all ingredients (minus the corn chips) into a large bowl and stir well.
  2. Refrigerate for about two hours before serving.
  3. Serve and scoop with your favorite corn chips.
