Great for the upcoming autumn season!
Ingredients (outer roll):
- 1/2 C sugar
- 2/3 C pumpkin
- 3 eggs
- 3/4 C Flour
- 1 tsp salt
- 1 tsp soda
- ½ tsp cinnamon
Ingredients (filling):
- 8 oz. cream cheese
- 2 T butter
- 1 tsp vanilla
- 1 C powdered sugar
Directions:
- Mix all outer roll ingredients well.
- Use 10×15 greased jelly roll pan, line pan with wax paper, and grease wax paper.
- Pour batter over wax paper.
- Bake at 325° for 14 min.
- Flip roll onto wax paper and roll up tightly.
- Cool in refrigerator for 1 ½ hours.
- Mix filling ingredients.
- Unroll cooled roll and spread filling on top of roll.
- Re-roll and wrap in plastic wrap.
- Keep refrigerated.
