Great for the upcoming autumn season!

 

Ingredients (outer roll):

  • 1/2 C sugar
  • 2/3 C pumpkin
  • 3 eggs
  • 3/4 C Flour
  • 1 tsp salt
  • 1 tsp soda
  • ½ tsp cinnamon

Ingredients (filling):

  • 8 oz. cream cheese
  • 2 T butter
  • 1 tsp vanilla
  • 1 C powdered sugar

Directions:

  1. Mix all outer roll ingredients well.
  2. Use 10×15 greased jelly roll pan, line pan with wax paper, and grease wax paper.
  3. Pour batter over wax paper.
  4. Bake at 325° for 14 min.
  5. Flip roll onto wax paper and roll up tightly.
  6. Cool in refrigerator for 1 ½ hours.
  7. Mix filling ingredients.
  8. Unroll cooled roll and spread filling on top of roll.
  9. Re-roll and wrap in plastic wrap.
  10. Keep refrigerated.
