What Cooking at Copeland?
Norwegian Apple Pie

Karen says, “My sister spent 3 months in Norway as an exchange student for American Field Service and brought back this recipe. It’s more like a cake!”
½ cup flour
¾ cup sugar
1 large egg
¼ teaspoon salt
1 teaspoon baking powder
1 cup apples, diced
½ teaspoon vanilla
½ cup nuts (if desired)
- Mix the first four ingredients.
- Sprinkle baking powder on top, add the remaining ingredients. Stir until moistened (batter will be very thick).
- Bake in 8” round or square pan at 375 degrees for 30 minutes.
Tip: Karen usually doesn’t frost – she sometimes sprinkles cooked cake with confectioners’ sugar
