What Cooking at Copeland?

Norwegian Apple Pie

Karen says, “My sister spent 3 months in Norway as an exchange student for American Field Service and brought back this recipe. It’s more like a cake!”

Ingredients:

½ cup flour
¾ cup sugar
1 large egg
¼ teaspoon salt
1 teaspoon baking powder
1 cup apples, diced
½ teaspoon vanilla
½ cup nuts (if desired)

Directions:

  1. Mix the first four ingredients.
  2. Sprinkle baking powder on top, add the remaining ingredients. Stir until moistened (batter will be very thick).
  3. Bake in 8” round or square pan at 375 degrees for 30 minutes.

Tip: Karen usually doesn’t frost – she sometimes sprinkles cooked cake with confectioners’ sugar
