“The Assisted Living residents on my floor love this Chocolate Angel Food Cake.”
Serves 8 to 10
Ingredients:
2 cups egg whites
1 ½ cups white sugar
¼ tsp. salt
¼ cup Hershey’s Cocoa
1 tsp. cream of tartar
¾ cup cake flour
1 tsp. vanilla
Directions:
- Measure all dry ingredients before beating egg whites
- Sift sugar 3 times
- Sift flour and cocoa 6 times
- Beat egg whites at room temperature until frothy
- Add cream of tartar and beat until peaks form, but not dry
- Fold into sugar, a little at a time
- Add vanilla and then flour
- Fold carefully into ungreased Angel Food pan
- Bake at 325°F on lower oven rack for 65 minutes
- Invert until cake is cool and remove
