“The Assisted Living residents on my floor love this Chocolate Angel Food Cake.”
Serves 8 to 10

Ingredients:
2 cups egg whites
1 ½ cups white sugar
¼ tsp. salt
¼ cup Hershey’s Cocoa
1 tsp. cream of tartar
¾ cup cake flour
1 tsp. vanilla

Directions:

  • Measure all dry ingredients before beating egg whites
  • Sift sugar 3 times
  • Sift flour and cocoa 6 times
  • Beat egg whites at room temperature until frothy
  • Add cream of tartar and beat until peaks form, but not dry
  • Fold into sugar, a little at a time
  • Add vanilla and then flour
  • Fold carefully into ungreased Angel Food pan
  • Bake at 325°F on lower oven rack for 65 minutes
  • Invert until cake is cool and remove
